Sensory profile and tasting of Melgarejo Hojiblanca 250ml

The smell and taste profile of this Jaén oil stands out for its fruity freshness and the range of wild nuances it evokes. Each drop carries the vitality of olives picked on time and milled with care, which is why Melgarejo Hojiblanca 250ml is so easy to recognise in a tasting.

  • Nose: intense fruitiness with direct hints of freshly cut grass, Iberian acorn, green almond, banana and crisp apple.
  • Palate: a distinctly sweet entry with a fluid, light texture and a delicate touch of pungency that appears towards the end without being aggressive.
  • Finish: a very soft, fresh nasal aftertaste with remarkable vegetal finesse.

The Hojiblanca variety has an unmistakable signature of fruitiness and smoothness that enriches any preparation. Tasting Melgarejo Hojiblanca 250ml at the table is a true celebration of the aromas of the Andalusian countryside.

The Melgarejo mill and the Pegalajar countryside

The Melgarejo brand is based in the town of Pegalajar, in the province of Jaén. The company was founded in 1995 by the children of Francisco Melgarejo and Juana Cordero, continuing an olive-growing activity documented over more than two hundred years in their family.

The estate works representative plots such as El Cuchillejo in Pegalajar, with groves extending into other parts of Jaén and Málaga. Harvesting begins at the start of November. Extraction uses a continuous two-phase system to preserve all the organoleptic qualities, and the oil is kept in stainless steel tanks under a nitrogen atmosphere.

Culinary suggestions for Melgarejo Hojiblanca 250ml

Thanks to its sweet, lightly bitter fruit profile, Melgarejo Hojiblanca 250ml is an extraordinary seasoning for fresh dishes and seafood plates, where the aim is to add fragrance without overpowering the texture or the base flavour.

Raw use

In cold dishes this extra virgin olive oil reaches its finest moment. It is indispensable for emulsifying a traditional Andalusian gazpacho or salmorejo, dressing tomato and avocado salads and lifting courgette carpaccios with shavings of aged cheese.

Hot cooking

Under moderate heat it accompanies grilled blue fish such as mackerel or sardines, poultry and white meats sautéed with vegetables, and aromatic bases for seafood rice. A small amount of Melgarejo Hojiblanca 250ml goes a long way in the pan.

  • Gazpacho and salmorejo emulsified with a good drizzle.
  • Grilled white and oily fish with flaky sea salt.
  • Green salads with young shoots, rocket and nuts.
  • A final dressing for vegetables roasted over charcoal.
