Isbilya

In Umbrete, in the Aljarafe of Seville, Aceites Yllanes Marini grows its olive trees in continuous hedgerows, a layout that lets light reach every leaf. The olives take under two hours to go from tree to mill.

Isbilya is its line of blends, made under the eye of olive oil expert Maximiliano Arteaga: Intenso, from Arbosana and Koroneiki, powerful and bitter, and Delicado, gentler. Two ways of understanding the same Seville grove.
