Isbilya Excellence Koroneiki is Greek character on Sevillian soil: Koroneiki, a variety with small olives and a powerful oil, turned into an intensely green single-variety oil on the Isbilya estates in Umbrete.
This special edition is bottled unfiltered, just as it leaves the mill. Isbilya Excellence Koroneiki is olive oil at its most direct, with all the intensity of the first extraction.

From the Aljarafe, in under two hours
Isbilya is made in Umbrete, in the Aljarafe near Seville, by Aceites Yllanes Marini. Its olive trees grow as a continuous hedge, a layout that lets light reach the whole tree so the olives ripen evenly.
The harvest is brought forward to mid-October, while the fruit is still green, and done in the coolest hours, using only olives picked from the tree. In under two hours the olives reach the mill, where the oil is cold-extracted and bottled under an inert atmosphere.
Where Isbilya Excellence Koroneiki shines
- Grilled meats.
- Pulses and stews.
- Ripe tomatoes with coarse salt.
- Mature cheeses and sautéed mushrooms.
- A thick salmorejo.
Isbilya Excellence Koroneiki in a 500 ml bottle

The 500 ml bottle comes in its gift box, which protects the oil from light and makes it a present ready to hand over. Being unfiltered, it may look slightly cloudy and show some natural sediment at the bottom.
It is best used within the months after bottling; close the bottle well after each use and keep it in its box, away from heat. A thread over a vegetable soup or roast potatoes at the end changes the dish completely.
