Padilla 1808 Selección is Aceites Padilla’s most careful take on Picual from Jaén: olives picked in November at their ideal ripeness, pressed into an extra virgin olive oil that is cold-extracted at no more than 27 ºC.

It arrives as a case of 6 PET containers of 2 L. Each container is opened when its turn comes while the others wait, sealed, with all the green fruitiness, the hint of tomato and artichoke and the smoothness that set it apart. An oil to keep near the stove and use without counting.

Padilla 1808 Selección in the glass

Nose

It opens with green olive of medium fruitiness, and soon light notes of tomato and artichoke appear.

Palate

The entry is smooth. Bitterness and pepperiness are light and so well judged that neither beats the other.

Finish

It closes with a clean, vegetal memory of medium length, as Picual tends to do when picked on time.

The Padilla family and their Jaén groves

Behind every container is a family of olive growers tending their own trees in Jaén. For them Picual is the star of the landscape, but not the only one: they have also planted Taggiasca and Carlesca, two Italian varieties rarely seen in Spain, handled with the same care at harvest and in cold extraction.

Padilla 1808 Selección is the house’s choice among its Picual: olives from Jaén picked in November and worked calmly so that the oil keeps what the grove gave it.

What to enjoy Padilla 1808 Selección with

  • Toasted bread with tomato and a generous pour.
  • Salads of lettuce, tomato and spring onion.
  • Artichokes, courgette and peppers off the griddle.
  • White fish baked in the oven, with the oil added as it comes out.
  • Mediterranean rice dishes and stews that call for a base of green oil.

Why choose 6 PET containers of 2 L of Padilla 1808 Selección

Padilla 1808 Selección, case of 6 PET containers of 2 L

Six containers of 2 L make a well-organised pantry: 12 L split into packs that handle easily with one hand, pour without effort and do not force you to open the whole stock at once. It is the format for anyone who buys once and cooks in peace for months.

While one is in use, the others stay sealed, safe from light and air. Keep the case in a cool cupboard, away from the stove and any source of heat, and close the container in use tightly after every serving.

Aceites Padilla

Padilla is a family of olive growers in Jaén who, besides their long-standing Picual, dared to plant Italian varieties such as Taggiasca and Carlesca, also known as Don Carlo, from Umbria.

The olives are picked in early November and extracted cold, at 22 to 24 ºC, on the same day. The result is a range that runs from the 1808 Picual for daily cooking to selections that surprise at a tasting.
