Tasting profile of Supremo Lucio 500ml

During organoleptic tasting, this monovarietal demonstrates the stunning individuality that a restored heritage cultivar can achieve in high-end cold extracted olive oil. Its fresh subtlety and gentle sweetness impress with immediate elegance from the initial swirl in the glass.

  • Nose: medium aromatic intensity of notable finesse, delivering crisp green apple, tender spring grass and a subtle floral scent of white blossoms.
  • Palate: delicate and silky progression across the palate, with gentle sweetness, exceptionally low vegetal bitterness and a pure fluid texture.
  • Finish: clean and pleasing finish, accompanied by a gentle peppery warmth that refreshes the mouth and leaves a delightful springtime memory.

Supremo, an oil from Jaén

Supremo was founded in 2013 in Jaén by Andrés García and Alberto Molinero (Aceite Supremo S.L.). Each of the house’s oils comes from a different grove in the province.

Royal and Cornezuelo, organically farmed, grow behind Huelma at over 800 metres above sea level; Picual in the Sierra de la Campiña, and Arbosana at the foot of Arjona.

Gastronomic uses ideal for Supremo Lucio 500ml

The delicate nature of Supremo Lucio 500ml makes it particularly suited to sensitive culinary dishes where a pungent oil would eclipse subtle produce. It is the premier seasoning to enhance fresh seafood, tender garden vegetables and contemporary light cuisine where elegance is paramount.

Raw finishing

Served raw, it displays its finest qualities over scallop carpaccio, white fish marinated in citrus, salmon tartare, endive salads, or simply poured over warm crusty sourdough bread for a morning breakfast brimming with countryside elegance.

Cooking and warm preparations

In warm culinary preparations, it should be added off the heat over creamy pumpkin or leek soups, steamed white rockfish and sautéed wild asparagus spears, imparting a luminous sheen and a rare floral fragrance that crowns the plate.

  • Scallop or sea bass carpaccio sprinkled with fine sea salt flakes.
  • Chilled vichyssoise or cold melon soup garnished with fresh mint.
  • Steamed wild rockfish served over thinly julienned garden vegetables.
  • Toasted artisan sourdough bread with grated heritage tomatoes.

Supremo

Supremo was born in 2013, founded by two Jaén entrepreneurs, Andrés García and Alberto Molinero, with the backing of the Cooperativa de San Juan in the capital, a house with more than half a century of history.

The idea was to bottle each variety on its own: Royal, Cornezuelo, Arbosana, Picual, Hojiblanca and Lucio. Some, such as Royal and Cornezuelo, grow beyond Huelma at more than 800 metres. Tasting them in a row is a journey through the olive groves of Jaén.
