The Padilla Selección Carlesca is an uncommon extra virgin olive oil: Carlesca, also called Don Carlo, is an Italian variety from Umbria that the Padilla family grows in a young plantation in the province of Jaén. It comes in a 500 ml bottle, the kind you open to try something different.

The olives are picked in early November and cold-extracted at 22–24 ºC the same day. The result is a mid-green oil with medium green-olive fruitiness, fruity, citrus and herbal notes, and a bitterness you notice more than the pepperiness. The Padilla Selección Carlesca shows how a variety from Umbria sounds when it grows in Picual country.

A variety from Umbria, grown in Jaén

Aceites Padilla makes extra virgin olive oil in Jaén from its own family groves. Alongside Picual, the province’s leading variety, the family has planted Italian varieties rarely seen in Spain, such as Taggiasca and Carlesca, to offer different profiles.

Carlesca, or Don Carlo, comes from Umbria. For the Padilla Selección Carlesca it grows in a young plantation, is picked in early November and reaches the mill the same day, for a cold extraction at 22–24 ºC.

Where the Padilla Selección Carlesca shines

  • Green-leaf salads, dressed raw.
  • Grilled chicken or turkey, with a thread added at the table.
  • Grilled or baked fish, with its citrus touch.
  • Roast white meats, to finish the plate.
  • Tender sautéed vegetables, with just the right bitterness.

Why the Padilla Selección Carlesca in a 500 ml bottle

Padilla Selección Carlesca, 500 ml bottle

At 500 ml, the bottle is the right size for an uncommon variety: it lasts several weeks of salads and simple dishes and sits easily on the table. It also works as a gift for someone who already has an everyday oil and wants to try something else.

Once opened, keep the bottle tightly closed in a cool place away from light.

Aceites Padilla

Padilla is a family of olive growers in Jaén who, besides their long-standing Picual, dared to plant Italian varieties such as Taggiasca and Carlesca, also known as Don Carlo, from Umbria.

The olives are picked in early November and extracted cold, at 22 to 24 ºC, on the same day. The result is a range that runs from the 1808 Picual for daily cooking to selections that surprise at a tasting.
